My name is Olivia. I'm starting this blog as a journalistic tool in my studies at the Maison Christian Faure pastry school. It's a private pastry school founded by the M.o.F, or Meilleur Ouvrier de France, Christian Faure.

I'm really excited to learn from very talented and knowledgeable people and I want to keep enhance my studies, keep track of my progress and just share tips and some delicious-looking pastries with everyone. :)

I'll try to cover the basics/techniques during the weekdays and the specific recipes on the weekend.

  1. Hi Olivia. I stumbled across your blog in my search for more information about the pastry school of Christian Faure. I recently visited Montreal and going to this pastry shop was the highlight of the whole trip. The desserts were so deliciously perfect and so exquisitely made. When I learned this was also a school I was very intrigued. M. Faure was so very nice and his passion became clear when I asked him about the best quiche I'd ever tasted. I really would like to go to this school, but the tuition is quite high and I'm unsure if I should make a career out of my love of French cakes and baking. I am trying to find out more about this school and why I should go here versus another school. Can you tell me why you chose to enroll here and what you think of it so far?

    And please keep updating your blog as I very much enjoy reading it and am quite interested in all that you're discovering. :)

    1. Hey Naiya! Sorry for the wait. I'm glad you had such a nice time there!

      The great thing about the school is that the classes are very small. My current class is only 4 people - and I think for the upcoming semester he's accepted 6 or so people. So it's very easy to get individual attention to your strengths and weaknesses. The teachers are very knowledgeable and they're always willing to help.

      That being said, you should remember that they are, above all, running a pastry shop with a school, not the other way around. Sometimes they need all hands on deck to fulfill orders and/or special events so this can lead to some days having no one to supervise you nor any real schedule. It can be a little disorganized on those days, especially if you prefer to have a set schedule. On the other hand, it's kind of cool to have those days if you like to do your own thing.

      One of the biggest reasons for enrolling was the class size and the broad spectrum of things they cover. I also appreciated the strong emphasis on learning and trying new things.

      The tuition is obviously a pretty big barrier. They don't offer scholarships but there are general scholarships that you can use in Quebec. I'm pretty sure it's on their site. I'm going to guess you're French, or are familiar with French, which will help. The majority of people speak French as their first language, so sometimes they will default to French without really thinking about it. Two of my classmates don't speak nor understand French very well, so it gets a little interesting when the teachers give us instructions in French... :)
